Kadayif recipe with walnuts

Ingredients for 10 servings:

  • 1 point Kadayif pastry threads
  • 250 g butter, melted
  • 200 g walnuts, chopped
  • 500 ml water
  • 500 g sugar
  • e.g. lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

not so sweet

First, bring the water and sugar to a boil in a small saucepan and simmer until a thick syrup forms. This takes about 30 minutes. If you like, you can add a few drops of lemon juice. Then chill the syrup. Tear the dough strands (kadayif) apart in a large bowl and mix with the melted butter. Place half of this mixture into a large, round dish (I used a 28 cm diameter baklava dish) and press down lightly. Spread the chopped walnuts on top, pour the other half of the kadayif-butter mixture over it, and press down firmly. Cut the kadayif before baking, so it will be easier to portion it later. Bake everything at 200 degrees Celsius for about 25 minutes until golden brown. Then pour the syrup over the kadayif and let it cool. When it has cooled, the syrup should be absorbed by the bottom layer and the top layer should be slightly crispy. Notes: This is my personal favorite version of this Turkish dessert, and I make it the way my mother did when I was a child. You can also use other types of nuts or make more syrup if it’s not sweet enough. Make sure the pan is tall enough and airtight so the syrup doesn’t leak.
