Ingredients for 6 servings:

  • 1 liter of milk
  • 400 g flour
  • 240 g sugar
  • 100 g butter
  • 8 eggs
  • 1 vanilla pod(s), pulp
  • 1 lemon(s), grated peel
  • 1 pinch of salt
  • Oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For the Kaiserschmarrn, place the flour in a bowl and mix with the milk, vanilla seeds, salt, and grated lemon zest to form a smooth batter. Now add the whole eggs to the batter and gently fold in with a fork. Divide the batter between two hot pans and cook over low heat for about 5 minutes on each side, then remove from the pan. Add the sugar to the pans. Spread the baked Kaiserschmarrn on top of the sugar and let it caramelize until golden brown. Use two forks to tear the Kaiserschmarrn into bite-sized pieces and serve. Serve with vanilla sauce.
