Ingredients for 2 servings:

  • 200 ml milk
  • 120 g flour
  • 1 pinch of salt
  • 1 tbsp sour cream
  • 4 egg whites
  • 100 g sugar
  • 4 egg yolks
  • 2 eggs
  • 50 g clarified butter
  • 20 g raisins
  • 50 g butter, in flakes

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 220°C. Whisk the milk, flour, salt, and sour cream well. Beat the egg whites with 50g of sugar until stiff peaks form. Whisk the egg yolks with the two remaining eggs and stir into the batter. Carefully fold in the beaten egg whites. Briefly foam the clarified butter in a pan and pour into a baking dish. Then pour the batter over the batter, sprinkle with the raisins, and bake, covered, in the oven for about 15 minutes. After baking, tear the Schmarrn into large pieces with two forks and sprinkle with the butter flakes and the remaining sugar. Mix everything well again and serve. Any type of compote goes well with it.
