Ingredients for 4 servings:

  • 5 eggs
  • 50 g sugar
  • 80 g sultanas
  • 50 g almond flakes or almond sticks
  • 60 g butter
  • 300 g flour
  • ½ tsp, leveled baking powder
  • 100 g cream cheese
  • 500 ml milk
  • some butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

with caramelized almonds and raisins

Preheat the oven to 150 degrees Celsius (fan-assisted). Caramelize the almonds (I prefer flaked almonds) in a pan with 2 teaspoons and 10g of butter. Place the almonds on a plate and separate them with a wooden spoon to prevent them from sticking together. Beat the egg whites until stiff peaks form and set aside. Pour boiling water over the sultanas to soak. In a large bowl, mix the flour with the baking powder. In another bowl, beat the egg yolks with the sugar until frothy. Add the milk, cream cheese, and the remaining melted butter and mix. Then add the wet mixture to the flour mixture and mix. Then fold the beaten egg whites and drained raisins into the batter. Put a little butter in a stainless steel pan and bake the batter briefly over medium heat. Now bake in the preheated oven at 150 degrees Celsius (fan-assisted) for 20 minutes. After 5 minutes of baking, sprinkle the almonds over the top. Bake for the last 5 minutes using the grill function at 200 degrees Celsius. The Kaiserschmarrn should be golden brown. Finally, simply shred it into pieces with two forks and sprinkle with powdered sugar. Serve hot. If you like, you can also serve it with vanilla sauce; it goes wonderfully with the filling.
