Ingredients for 6 servings:
- 1 ½ kg kale, frozen
- 1 ½ kg potatoes
- 9 slice(s) Kasseler , quantity according to taste
- 8 Mettwurst sausages
- 1 portion of ribs, with as much meat as possible
- 1.4 ml vegetable broth
- 3 onions
- 3 garlic cloves
- 100 g clarified butter
- salt and pepper
- nutmeg
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours
Reserve 3 each of the Mettwurst and Kasseler slices, then cut the remaining 5 Mettwurst and 6 Kasseler slices into small pieces. Peel the potatoes and cut them into small cubes. Finely chop the onions and garlic cloves and sauté them in hot, liquid clarified butter until translucent. Add the frozen kale and the diced potatoes (divide them between 2 pots if necessary) and season with salt, pepper and nutmeg. Then add the vegetable stock and the ribs (divide them between both pots if necessary) and let everything simmer for 30 minutes over low heat. Then remove the ribs and mash everything with a potato masher. Then add the ribs and both the chopped and whole Mettwurst and Kasseler slices and let simmer for another 30 minutes. Now comes the special part (gives them a great flavor): remove the ribs and the whole Mettwurst and Kasseler slices (of course, leave the chopped Mettwurst and Kasseler slices in). Remove the rib meat from the bones, remove the fat, and chop it finely with the whole Mettwurst and slices of smoked pork in a food processor or similar. Add it back to the kale (if necessary, combine both pots). Finally, season again with salt, pepper, and nutmeg and stir everything well.
