Kale with Smoked Pork, Boiled Sausage and Fried Potatoes

The perfect kale with smoked pork, boiled sausage and fried potatoes recipe with a picture and simple step-by-step instructions.

  • 2 kg Kale fresh
  • 3 small Onions
  • 4 tbsp Clarified butter
  • 400 ml Meatsoup
  • Salt and pepper
  • 700 gr Kassel roast salmon
  • 1,2 kg Waxy potatoes with their skin on
  • 6 Pc. Boiled sausage
  • 2 tsp Mustard
  1. Pluck the green cabbage from the leaf veins and wash. 2. Blanch in boiling salted water. Drain and quench. Roughly chop the cabbage.
  2. Peel and dice the onions. Heat 2 tbsp clarified butter in a large saucepan. Simmer the onions in it. Stir in the cabbage. Add the stock, bring to the boil and cook covered for about 11/2 hours.
  3. Wash the Kasseler and after 1 hour. Place on top of the kale, stirring the kale from time to time and adding a little more water if necessary.
  4. Cook the potatoes with the skin covered for about 18-20 minutes. Then drain, rinse in cold water and let cool down a little. Place the boiled sausages with the cabbage about 10 minutes before the end of the cooking time and let them cook covered.
  5. Peel the potatoes and cut into slices. Heat 2 tablespoons of clarified butter in a pan and turn the potato slices for about 10 minutes. Fry until golden brown. Season with salt and pepper.
  6. Remove the kasseler and cut into slices. Season the kale with salt, pepper and mustard. Arrange the kale, smoked pork, boiled sausage and fried potatoes on plates and serve.
