Ingredients for 1 servings:

  • 540 g flour
  • 80 g butter
  • 3 tbsp natural yogurt, firmer
  • 10 ml olive oil
  • 1 large egg(s), separated
  • 1 tbsp spice(s) (Mahlab powder – ground cherry kernels)
  • ½ pack of baking powder
  • some salt
  • e.g. sesame
  • n. B. Black cumin
  • Flour for the work surface

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the flour in a bowl and make a well in the center. Add the butter, yogurt, olive oil, and egg whites (reserve the yolks) to the well. Sprinkle the mahlab, baking powder, and salt over the flour and knead into a loose dough. The dough should be non-sticky and not too hard. Roll out on a lightly floured surface and cut out any desired shapes. Place on a baking sheet lined with parchment paper and brush with egg yolk (mix the egg yolk with a little yogurt if necessary). Sprinkle sesame and/or black cumin seeds over the cookies and bake in a preheated oven (convection oven, 160°C) until the cookies start to brown. It is recommended to buy the yogurt from a Turkish store; you can also get ground sour cherry, black cumin, and sesame seeds there at reasonable prices. These cookies are baked in Turkey for Kandil, a religious holiday, and are also distributed to neighbors.
