Ingredients for 12 servings:

  • 450 g smoked salmon in one piece
  • 3 gherkins
  • 1 onion(s), red
  • ½ bunch arugula
  • 12 tsp mayonnaise

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

great snack for a celebration

Bake the smoked salmon in a preheated oven at approximately 180°C for about 20 minutes. Remove from the oven after cooking and let cool. Finely slice the gherkins and red onion. Wash and trim the arugula, then cut the cooled smoked salmon into 12 slices, approximately 1/2 cm wide. Spread each slice with 1 teaspoon of mayonnaise (avoiding the edges). Then top with cucumber and onion strips and 2 to 3 arugula leaves. Carefully roll up the smoked salmon slices and secure each one with a toothpick. Warm asparagus is a great accompaniment during asparagus season.
