Ingredients for 1 servings:
- 230 g wheat flour
- 2 tsp, heaped baking powder
- 2 eggs (size M)
- 200 g crème fraîche or sour cream, yogurt, quark, or mixed
- 120 g sugar or honey or powdered sugar or maple syrup
- some vanilla flavoring or the pulp of 1 vanilla pod
- 100 g butter, melted or neutral oil
- 125 g cherry(s), fresh or from the jar, pitted
- 125 g banana(s), sliced or cut into small pieces
- 1 pinch of salt
- ¼ liter of milk
- ½ pack of pudding powder (vanilla flavor) for cooking
- 50 g sugar
- 2 packets of vanilla sugar
- 100 g butter
- some cherry juice from the jar (as desired, not too much)
- ½ banana(s), finely mashed
- some food coloring, of your choice (e.g. red or yellow)
- 2 tsp drink powder (cherry-banana flavor)
- possibly sugar pearls or candied fruits
- 12 paper baking cups or grease for the mold
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Cupcakes with cherries and banana pieces and a banana-cherry flavored buttercream topping
Preheat the oven to 160°C (fan assisted). Line each 12-hole muffin tin with a paper baking case or grease the cups thoroughly. Mix the flour with the baking powder. Mix the eggs with the crème fraîche or sour cream, sugar, and vanilla sugar or flavoring, then add the melted butter or oil. Quickly stir the flour mixture into the egg and sugar mixture and stir in the cherries and banana slices. Season with a pinch of salt, if desired. Pour the batter into the prepared muffin tin. Bake the cupcakes in the center of the oven for 25 minutes. Let cool and then remove from the tin. For the topping, take 3 tablespoons of 1/4 liter of milk and mix with 1/2 sachet of vanilla pudding powder, 50 g sugar, and 2 sachets of vanilla sugar. Bring the remaining milk to a boil. Stir the mixed pudding powder into the boiling milk. Remove the pudding from the heat and let it cool slightly (to room temperature) while stirring. Cream 100g of softened butter with a mixer until creamy, then stir in the room-temperature pudding a spoonful at a time. Now add half the mashed banana, the cherry juice, the KiBa drink powder, and the food coloring, and mix briefly again. Pipe onto the cooled cupcakes using a piping bag and decorate as desired.
