Ingredients for 3 servings:
- 500 g gyros meat
- 1 zucchini
- 1 bell pepper(s)
- 8 cherry tomatoes
- 3 eggs
- 200 g cottage cheese
- 125 g cheese, grated, for the dough
- 75 g grated cheese, for topping
- Sea salt and pepper
- Cayenne pepper
- 1 tsp coconut oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Preheat the oven to 220°C fan/convection oven. Combine the eggs, grated cheese, and cream cheese in a bowl and mix. Dice the zucchini, wash and dice the bell peppers, and wash and quarter the cherry tomatoes. Add the vegetables to the egg mixture, season with sea salt, pepper, and cayenne pepper, and mix well. Pour the mixture onto a baking sheet lined with parchment paper and spread evenly. Place the sheet in the oven for 20 minutes. Melt the coconut oil in a pan and cook the gyro until cooked through. Place the meat on the prepared base, sprinkle with grated cheese, and return the pizza to the oven for another 5-10 minutes, until the cheese is golden brown.
