Ingredients for 1 servings:

  • 500 g flour
  • 20 g yeast, fresh
  • 10 g salt
  • 1 tsp sugar
  • 250 g milk, lukewarm
  • 50 g oil (sunflower oil)
  • some oil for brushing
  • 1 egg(s)
  • 200 g cheese (e.g. Gouda)
  • 200 g ham (Katenschinken)
  • 1 egg yolk
  • 1 tsp milk

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

Croatian recipe for small cheese croissants, makes 40 pieces.

For the dough, dissolve the yeast, salt, and sugar in the milk. Add the egg and oil and mix well. Gradually add the flour and knead into a dough. Brush the dough with oil and let it rise in a warm place for at least 1 hour, until it has doubled in size. Grate the cheese. Knead the dough again briefly and divide it into 5 equal pieces. Roll out each piece into a circle a few millimeters thick and cut into 8 pieces like a pie (this works well with a pizza cutter). Take each triangle in your hand and stretch it out as thinly as possible. Cover the wide side with grated cheese and ham, fold the corners slightly so the filling doesn’t run out, and roll up towards the tip to form a croissant. Beat the egg yolk with the teaspoon of milk and brush the croissants with it. Bake in a preheated oven at 180°C for 25-30 minutes until golden brown. Tastes best lukewarm.
