Let rise in a warm place for 40 minutes. (For ham snails, also knead in the bacon.) Knead the dough again and divide into 8-12 pieces and roll into long, finger-thick sausages. Then form snails. Let rise on a baking sheet for another 20 minutes. Mix the egg yolk and brush over the snails.
