- 15 g Szechuan pepper
- 15 g cubeb pepper
- 15 g long pepper
- 15 g Tellicherry pepper
- 15 g peppercorns, white
- 15 g peppercorns, pink
- 15 g all-spice
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Pepper mixture of 7 spices
Weigh each peppercorn. Chop the long peppercorn with a knife until it’s the same size as the other peppercorns. Sort out any large allspice berries or chop them. Combine all the spices in a bowl and mix well. Pour the finished mixture into jars or mills and store in a dark place. Only grind or crush the king peppercorns shortly before seasoning.
