Kiwi semolina cream

Ingredients for 6 servings:

  • 6 kiwi(s) , (approx. 360 g peeled weighed)
  • 150 ml water
  • 80 g sugar
  • 1 tbsp lemon juice
  • 50 g semolina (durum wheat)
  • 300 ml cream
  • 1 packet of vanilla sugar

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

as a dessert or sweet main course

Halve the kiwi, scoop out the flesh with a spoon, or similar tool, and cut into small cubes. Bring the water, sugar, and lemon juice to a boil in a saucepan. Reduce the heat, add the kiwi pieces, sprinkle in the semolina, and simmer gently for about 10 minutes, stirring occasionally, until the semolina is well-swollen. Allow the kiwi semolina to cool completely. Then whip the cream with the vanilla sugar until stiff and fold into the kiwi semolina. Refrigerate until ready to serve. Tip: The semolina also tastes delicious without cream and served lukewarm as a sweet main course.
