Ingredients for 4 servings:
- 100 g sausage (extra sausage)
- 100 g butter, soft
- 2 processed cheeses (corners)
- 2 cucumber(s) , (pickle)
- 1 tsp chives
- 1 tsp parsley
- ½ tsp dill
- Salt
- pepper

Beat the butter with a fork or whisk until soft and fluffy. Finely chop the sausage and gherkins, mince them in a meat grinder or place them in a Chick Chef blender, and puree. Add the pureed/minced sausage and gherkins to the butter, fold in the Eckerl cheese, and mix well. Add the chopped herbs and season with salt and pepper. I learned this in cooking class ages ago in the early 90s; it’s a typically Austrian dish. Tastes great with dark bread. My husband regularly brings it to the office for a snack!
