Koelkasts sheep cheese pancakes

Ingredients for 2 servings:

  • 3 eggs
  • 150 g flour
  • Milk
  • 6 cocktail tomatoes
  • 10 olives
  • 100 g sheep’s cheese
  • Thyme
  • salt and pepper
  • possibly chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Make a thick pancake batter from eggs and flour, adding milk. It shouldn’t be too runny. You can also add some chives, cut into strips, if you like. Fry the batter whole in butter in a large pan (stovetop), then top with the halved cherry tomatoes, olives, and crumbled feta cheese. Once lightly browned on the bottom, place under the preheated grill for another 5-8 minutes. This will melt the feta cheese slightly, the pancake will rise nicely, and the tomatoes will become crispy. Variation: Add tomato, mozzarella, and (after baking) basil.
