Ingredients for 6 servings:

  • 200 g flour
  • 2 m.-sized eggs
  • 200 ml milk
  • 1 pinch of salt
  • 200 g ham
  • 200g mozzarella
  • 250 g tomatoes
  • e.g. salt and pepper
  • 1 bunch of basil
  • little oil

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 15 minutes

Mix flour, eggs, milk, and a pinch of salt to make a crepe batter and let it stand for half an hour. Meanwhile, cut the ham, mozzarella, and tomatoes into small cubes. Cook 12 crepes from the batter in a nonstick pan with a little oil, making them as thin as possible. Fill the crepes with ham, mozzarella, and tomatoes, season with salt and pepper, and sprinkle with chopped basil. Fold them into triangles. Bake in a hot oven on a baking sheet lined with baking paper at 200°C for about 5-10 minutes.
