Ingredients for 2 servings:
- 150 g diced ham or bacon
- 1 tbsp oil
- 200g spaghetti
- 3 egg yolks
- ½ cup cream, approx. 100 ml
- 50 g Parmesan, freshly grated
- salt and pepper
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
This is how I’ve been making Carbonara for at least 20 years
Brown the ham cubes in oil. Meanwhile, cook spaghetti according to the package instructions. Meanwhile, whisk the egg yolk with the cream and Parmesan cheese, season with salt and pepper. Quickly mix the egg mixture with the cooked, drained spaghetti and the crispy ham or bacon cubes. Tip: I add the drained spaghetti (which can still be a little wet) back to the hot pot and return it to the turned-off stovetop. Mix everything just until the egg yolk thickens. Don’t overmix, or you’ll end up with scrambled eggs. Season well with salt and pepper.
