Kohlrabi and apple salad

Ingredients for 4 servings:

  • 1 m.-large kohlrabi
  • 1 apple, sour
  • 1 bunch of parsley
  • 3 tbsp fruit vinegar
  • 2 tbsp nut oil
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the kohlrabi and coarsely grate it. Wash the apple and coarsely grate it. Finely chop the washed parsley and mix it with the kohlrabi and apple in a bowl. Make a dressing from the remaining ingredients and pour it over the kohlrabi and apple mixture. Mix well and serve. This makes enough as a side dish for four people.
