Kohlrabi balls

Ingredients for 4 servings:

  • 3 m.-large kohlrabi
  • 1 tbsp clarified butter
  • 3 tbsp water
  • 1 tbsp sugar
  • 3 tbsp lemon juice
  • ½ bunch parsley, flat
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the kohlrabi and cut into balls. Melt the clarified butter in a pan and fry the balls. Add the water, cover, and simmer over medium heat for about 15 minutes. Shake the pan occasionally to prevent the balls from burning. Remove the lid and, once all the liquid has evaporated, sprinkle in the sugar and let it caramelize briefly. Add the lemon juice and season with salt and pepper. To serve, stir in the chopped parsley. If you use olive oil instead of clarified butter, the dish is vegan.
