Kohlrabi salad with mustard dressing

Ingredients for 2 servings:

  • 350 g kohlrabi
  • 1 apple
  • 30 g arugula
  • 2 tbsp white wine vinegar
  • 4 tbsp apple juice
  • 1 tbsp honey
  • 1 tbsp mustard, medium hot
  • 2 tbsp olive oil
  • herbs (salad)

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Peel and quarter the kohlrabi and apple, then grate them into thin slices. Clean the arugula and tear it into bite-sized pieces. Place in a bowl and season with salt and pepper. Mix the remaining ingredients to make a dressing. Mix the dressing with the salad ingredients and let it sit for 30 minutes.
