Ingredients for 4 servings:
- 500g spaghetti
- 150 g bacon
- 2 tbsp butter or clarified butter
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
Spaghetti with bacon – simple, delicious, cheap and quick to make
Cook the spaghetti in plenty of salted water according to the package instructions until al dente. After cooking, drain the spaghetti in a colander and set aside; do not rinse with water. Return the spaghetti pot to the stove. Finely dice the bacon and fry in the spaghetti pot with the butter until the bacon is slightly translucent; do not allow it to blacken. Now stir in the spaghetti and season lightly with salt. Let the spaghetti-bacon mixture simmer on speed 1 for at least 20 minutes, then season with salt and, if desired, pepper. The spaghetti can be a bit mushy. The name Schmalznudeln comes from my grandmother’s time, when clarified butter was used for cooking and baking. In Koblenz, Schmalznudeln is typically served with preserved fruit (cherries, peaches, or mirabelle plums). The combination of salty spaghetti and sweet fruit is fantastic.
