Kritharaki salad with oranges and grapefruit

Ingredients for 2 servings:

  • 150 g Kritharaki (rice-shaped noodles)
  • 2 small oranges
  • ½ pink grapefruit(s)
  • 1 small onion(s), red
  • salt and pepper
  • 2 tbsp extra virgin olive oil
  • 1 tbsp mint leaves, fresh
  • 1 tbsp flat-leaf parsley

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Cook the kritharaki in salted water according to the package instructions for about 12 minutes, or until al dente. Place in a sieve and drain. Peel the oranges and grapefruit, removing the white part. Cut the fillets between the skins, reserving the juice and squeezing it out of any remaining skin. Mix the juice with salt and pepper, then whisk in the oil. Mix the kritharaki with the dressing. Halve the fruit fillets, and finely chop or tear the mint and parsley leaves. Thinly slice the peeled onion. Add the fruit, herbs, and onion to the noodles and season to taste.
