Ingredients for 10 servings:

  • 1 m.-large Hokkaido pumpkin(s)
  • 1 kg minced pork
  • 5 cloves garlic
  • 2 large onions
  • 6 stalks of parsley, flat
  • some chili powder
  • 1 tbsp, leveled salt
  • 1 tsp, levelled pepper, freshly ground
  • ½ tsp allspice, freshly ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 35 minutes

with Hokkaido pumpkin

Remove the stem and blossom end from the pumpkin, halve it, remove the seeds and soft core, and dice the flesh. Finely chop the cubes in a food processor. Peel the onions and garlic and cut them into smaller pieces. Finely chop both in the food processor along with the parsley. Include the parsley stalks. Depending on the size of your food processor, you may need to work in stages. If you don’t have a food processor, just halve and quarter the pumpkin and then coarsely grate it. Peel the onions and garlic and finely dice them. Finely chop the parsley and stalks. Place them in a large bowl with the ground pork and all the other ingredients and mix thoroughly. Season to taste and add more seasoning if desired. Pour the batter into the dish and smooth it down. Close the lid and bake on the lowest gas flame for about 45 minutes at 1/3 of the gas flame, and then for another 20 minutes at 1/2 the gas flame.
