Kumpir – basic recipe

Ingredients for 1 servings:

  • 3 m.-sized potatoes
  • 1 tbsp butter, salted
  • 1 tbsp Gouda, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Potato filled with cheese and butter

Preheat the oven to 230°C (fan). Pierce the potatoes 4-5 times all over with a knife and wrap each one individually in aluminum foil. Place the parcels in the oven and leave for 40-50 minutes. Peel one potato and mash it with a tablespoon of salted butter and 1-2 tablespoons of Gouda cheese. Cut the other potatoes open and place them next to each other. Pour the potato, butter, and cheese mixture on top and mash it lightly into the potatoes. Now the kumpir can be filled further or topped with cold or warm ingredients of your choice. Basically, anything goes in here, from vegetables to salads to meat. The kumpir is intended as a main meal.
