Ingredients for 4 servings:

  • 100 g kumquat(s), fresh
  • 45 g sugar
  • 40 ml Grand Marnier
  • 1 ½ orange(s), organic, juice and peel
  • 1 vanilla pod(s)
  • 1 pinch of cinnamon

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 17 minutes

Wash the kumquats, dry them, and slice them thinly. Squeeze the oranges and measure out approximately 180–200 ml of juice. Caramelize the sugar in a saucepan. Deglaze with Grand Marnier and pour in the orange juice. Add 1 tablespoon of orange zest, if desired. Cinnamon and vanilla pod are optional and perfect for Christmas. In summer, you can omit these ingredients. Add the kumquat slices, cinnamon, and vanilla seeds and pod, and simmer for 4–5 minutes. When the ragù has a creamy consistency, it’s ready to serve. Serve with amaretti and vanilla parfait with tipsy crispy bases from my cookbook.
