Kumquat jam with little sugar and no alcohol

Ingredients for 1 servings:

  • 500 g gelling sugar 3:1
  • 1 ½ kg kumquat(s)

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 4 minutes; Total time approx. 8 hours 34 minutes

Rinse the kumquats under hot water and slice. Remove the seeds. Stir the chopped kumquats into the preserving sugar and let them sit for a few hours or overnight. Then, using a hand blender, gently puree the fruit until smooth, but only add enough so that there are still plenty of pieces. Bring the fruit to a boil, simmer for one minute, and pour into clean twist-off jars. This quantity makes about 4 jam jars. The jam develops the full kumquat flavor and is free from additives such as spices, other fruits, or alcohol. I use a 3:1 sugar ratio because the consistency of the jam is already very good, and the sweetness of the fruit alone is enough.
