Bread: Tomatino

The perfect bread: tomatino recipe with a picture and simple step-by-step instructions.

  • 480 g Flour 550
  • 40 g Sourdough
  • 350 ml Ice cold water
  • 5 g Yeast
  • 1 Egg yolk
  • 1 Tl Salt
  • 1 El Honey
  • 10 g Chopped basil
  • 40 g Dried tomatoes
  • 20 g Extra virgin olive oil
  1. Put the flour, sourdough, water, yeast, egg yolk, salt and honey in a food processor, first slowly knead for 10 minutes, then quickly knead for 8 minutes until it comes off the edge of the bowl.
  2. Finely chop the basil and tomatoes. When the batter is smooth, add the basil, olive oil and tomatoes. Now oil a bowl, put the dough in there and cover it in the fridge overnight.
  3. Then tip the dough upside down on a floured work surface, form 2 ciabattas, place on a baking sheet and cover again for half an hour.
  4. Preheat the oven to 230 C °, preferably on a baking stone, then bake for 30-40 minutes.
  5. Baked the bread again with fried onions was also very tasty!
