Bread: Tomatino
The perfect bread: tomatino recipe with a picture and simple step-by-step instructions.
- 480 g Flour 550
- 40 g Sourdough
- 350 ml Ice cold water
- 5 g Yeast
- 1 Egg yolk
- 1 Tl Salt
- 1 El Honey
- 10 g Chopped basil
- 40 g Dried tomatoes
- 20 g Extra virgin olive oil
- Put the flour, sourdough, water, yeast, egg yolk, salt and honey in a food processor, first slowly knead for 10 minutes, then quickly knead for 8 minutes until it comes off the edge of the bowl.
- Finely chop the basil and tomatoes. When the batter is smooth, add the basil, olive oil and tomatoes. Now oil a bowl, put the dough in there and cover it in the fridge overnight.
- Then tip the dough upside down on a floured work surface, form 2 ciabattas, place on a baking sheet and cover again for half an hour.
- Preheat the oven to 230 C °, preferably on a baking stone, then bake for 30-40 minutes.
- Baked the bread again with fried onions was also very tasty!
