Labskaus quick and easy

Ingredients for 2 servings:

  • 1 can of corned beef
  • Potato(s), for 2-3 people
  • 5 gherkins (more or less to taste)
  • 1 cup of milk
  • 2 eggs
  • 1 jar beetroot

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and boil the potatoes. Dice the gherkins. Brown the corned beef in a pan. Mash the cooked potatoes with the milk and a pinch of nutmeg. Stir in the gherkins and corned beef and season with salt and pepper. Fry the eggs in the pan and place each egg fried on top of a portion of Labskaus. Serve with beets.
