Ingredients for 4 servings:

  • 6 eggs, including the yolk
  • 4 eggs, of which the egg whites
  • 125 g sugar
  • 70 g starch flour
  • 60 g flour
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the egg yolks with one-third of the sugar until frothy, beat the egg whites until stiff peaks form, then stir in the remaining sugar and add to the egg yolk mixture. Sift the cornstarch and flour together and carefully fold into the egg yolk and egg white mixture. Fill a piping bag with the very stiff sponge mixture with a large nozzle and pipe 6cm long sticks onto a greased baking sheet, leaving plenty of space between them. Bake at 200°C for 12 to 15 minutes, until golden yellow. Roll them in granulated sugar while they are still warm to keep them nice and crispy, or sprinkle with powdered sugar once they have cooled. Instead of sticks for ladyfingers, you can just as easily pipe round dots or rings (it’s a bit easier to start with).
