Laeticia's crispy whole wheat pizza dough

Ingredients for 4 servings:

  • 100 g whole wheat flour
  • 400 g wheat flour type 550
  • 1 bag(s) of dry yeast
  • ½ tsp baking malt
  • 1 tsp salt
  • 1 pinch(s) of sugar
  • 300 ml water, lukewarm
  • 3 tsp olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Knead all ingredients with a stand mixer on low speed for 5 minutes and then on high for 3 minutes. After this time, the dough should come away from the bowl and be smooth and fluffy. Cover the bowl with cling film and let it rise in a warm place until doubled in size (this takes about 45 minutes). Now process as usual.
