Lamb in Zucchini Fan with Paprika Vegetables
The perfect lamb in zucchini fan with paprika vegetables recipe with a picture and simple step-by-step instructions.
Lamb in a courgette fan:
- 6 Pc. Saddle of lamb
- Salt and pepper
- 6 tbsp Olive oil
- 2 Pc. Zucchini
- 50 g Butter
- 3 tbsp Lamb farce
- 1 Pc. Grated lemon peel
- 1 Pc. Sprig of thyme
- 1 Pc. Rosemary sprig
Paprika vegetables:
- Espelette pepper
- 1 shot Honey
- Salt
- 1 Pc. Vegetable onion
- 1 Pc. Red peppers
- 1 Pc. Yellow peppers
- 1 Pc. Zucchini
- 1 Pc. Eggplant fresh
- 1 Pc. Clove of garlic
Paprika stock:
- 1 Pc. Shallot
- 1 Pc. Clove of garlic
- 1 Pc. Red peppers
- 1 Pc. Potato
- 3 tbsp Olive oil
- Salt and pepper
- Espelette pepper
- 0,5 l Poultry stock
- Noilly Prat
Lamb in a courgette fan:
- Salt and pepper the lamb pieces, fry them briefly on all sides in olive oil. Let cool down.
- Cut the zucchini into thin, even slices. Fry the slices in oil, season with salt, pepper and drain on kitchen paper.
- Turn the lamb in the chopped thyme, rosemary and lemon.
- Lay out the zucchini on buttered aluminum foil, overlapping (approx. 4 slices per piece of lamb). Cover the courgette fan with farce (puree 1 piece of lamb with cream and allspice, season with salt and pepper).
- Place the remaining pieces of lamb on top and wrap with zucchini, wrap in aluminum foil and turn tightly into a candy. Let the lamb candy soak in 80 degrees warm water for 14 minutes just before serving. Then wrap it out of the foil and cut it diagonally.
Paprika vegetables:
- Cut all the vegetables into diamonds and fry them individually in oil. Season to taste with salt and allspice d´esplette. Steam the onions with a little water and honey for a longer time. Just before serving, combine the vegetables, heat them up, add the garlic and season to taste.
Paprika stock:
- Sauté shallot, paprika and potato in oil. Pour the poultry stock on top. Let it boil soft. Puree and sift. Season to taste with spices and Noily Prat.
Serving:
- Place the lamb on the vegetables and serve with a little sauce.
