Lamb's lettuce with mushrooms and goat's cheese

Ingredients for 4 servings:

  • 150 g lamb’s lettuce
  • 250 g mushrooms
  • 150 g goat’s cheese
  • 60 g pine nuts
  • 2 spring onions, the green part
  • some olive oil
  • some balsamic vinegar
  • some salt and pepper from the mill

Working time approx. 20 minutes; Total time approx. 20 minutes

my favorite salad

Wash and dry the lamb’s lettuce, and remove the stems. In a bowl, toss the lettuce with the goat’s cheese, making sure to break up the cream cheese. Trim the mushrooms and slice them thinly. Cut the spring onion stems into approximately 1 cm pieces. Toss the lettuce, spring onions, and mushrooms with olive oil and balsamic vinegar, then season well with salt and pepper. Gently toast the pine nuts in a small pan with a little olive oil until browned (stirring well, as they burn easily). Add the nuts to the salad and serve.
