Lamb's lettuce with salmon ham

Ingredients for 4 servings:

  • 250 g lamb’s lettuce
  • 2 orange(s), filleted
  • 8 slice(s) ham (salmon), form into rolls
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 4 tsp olive oil
  • 1 tsp honey
  • 1 tsp mustard
  • 4 tbsp vegetable broth
  • 5 tbsp orange juice, preferably freshly squeezed
  • 1 tsp pepper, coarse
  • 3 tbsp Parmesan, finely sliced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and wash the lamb’s lettuce, arrange it on plates, and top with smoked ham and orange segments. Mix the vinegar with oil, honey, mustard, broth, orange juice, and pepper, pour over the salad, and finally sprinkle with shaved Parmesan cheese. We like to serve this salad with baguette.
