Quick puff pastry quiche with green asparagus

Ingredients for 1 servings:

  • 1 pack of puff pastry, from the refrigerated section
  • 5 stalk(s) asparagus, green
  • 1 cup goat’s cheese
  • ½ cup sour cream
  • Sea salt
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Cut the puff pastry (I use the one with the included baking paper) to the appropriate size and line a tart pan (I use a porcelain one). Don’t forget the edges! Mix the goat’s cheese with half a cup of sour cream, season with sea salt and freshly ground pepper, spread it on the puff pastry, and spread it evenly. Wash and dry the green asparagus, trim off the bottom ends, and cut the rest into pieces. Spread the asparagus on the cream cheese mixture. Bake at medium temperature for about 40-45 minutes; the edges should be golden brown. Serves 4-6 as an appetizer, or 2 as a main course (perhaps with a mixed salad). Delicious served hot or lukewarm.
