Lamb’s Lettuce with Tuna Dressing

Ingredients
 

  • 100 g Lamb's lettuce
  • 1 bunch Spring onions
  • 10 Cherry tomatoes
  • 1 can Tuna in oil
  • 2 tbsp Freshly grated Parmesan
  • 2 tbsp Balsamic vinegar
  • 4 tbsp Olive oil
  • 1 tbsp Honey
  • Salt pepper

Instructions
 

  • Clean, wash and spin dry the field lettuce.
  • Wash the spring onions and cut into fine rings.
  • Wash tomatoes and cut in half.
  • Arrange the lettuce, spring onions and tomatoes on a plate. with one tbsp ger. Sprinkle the Parmesan on top.
  • For the dressing, drain the tuna and pick it apart with a fork.
  • 1 tablespoons of Parmesan, vinegar, oil and honey in a tall mixing bowl and finely pureed with a hand blender (should be a thick mass)
  • If too firm, add a little more olive oil.
  • Season the dressing with salt and pepper and spread over the lamb's lettuce.
