Latte Cotta with strawberries and mango

Ingredients for 5 servings:

  • 600 ml milk
  • 200 ml cream
  • 1 lime(s)
  • 12 g pectin
  • 120 g sugar
  • 40 g cocoa butter
  • 1 mango(s)
  • 300 g strawberries

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Bring the milk and cream to a boil and melt the cocoa butter. Combine the pectin and sugar and stir in. Add a little lime zest and mix well. Pour the mixture into a ring mold and let it cool. Let it set in the refrigerator. Peel and finely dice the mango. Finely puree half of the cubes and add the other half and stir. Finely puree the strawberries. Then transfer to a container and place in the freezer. To serve, spread some strawberry puree on each plate. Place the latte cotta next to it and fill it with the mango compote.
