Latte Machiato Muffins

Ingredients for 12 servings:

  • 80 g chocolate shavings (dark)
  • 280 g flour
  • 3 tsp baking powder
  • 1 tbsp cocoa powder
  • 60 g butter (liquid but cooled)
  • 100 g sugar
  • 150 ml coffee, strong or espresso (cooled)
  • 150 ml milk
  • 2 eggs
  • 150 g powdered sugar, 2 tbsp cooking cream
  • 2 tbsp coffee, espresso (cooled)
  • Cocoa powder and mocha beans

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Mix the batter ingredients well and pour into a muffin tin lined with paper baking cups. Bake in a preheated oven at 180°C (top and bottom heat) for about 25 minutes. Let cool. Mix together the powdered sugar, cooking cream, and coffee and pour over the muffins. Then decorate with the mocha beans and cocoa powder.
