Ingredients for 3 servings:

  • 125 ml tomato juice
  • 500 g minced meat
  • 350 g cherry tomatoes
  • 2 bunches of chives
  • 2 slice(s) cheese, medium-aged Gouda
  • 2 onions
  • 1 roll, stale
  • 1 egg(s)
  • Salt
  • Pepper, freshly ground
  • rosemary
  • Thyme
  • Mozzarella

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Vigorously mix the tomato juice with salt, freshly ground pepper, the egg, thyme, and rosemary. Then knead the tomato juice with a soaked stale bread roll and the minced meat mixture. Wash and halve the cherry tomatoes. Finely slice the chives. Slice the cheese. Divide the minced meat dough into five pieces and layer them in a loaf pan, alternating with the tomato halves, Gouda slices, and chives. Bake the meatloaf in a preheated oven at 200°C for 35 minutes. Then top the roast with the sliced ​​mozzarella and bake for another 10 minutes.
