Leaf spinach and potato mash

Ingredients for 2 servings:

  • 500 g fresh leaf spinach
  • 4 large potatoes
  • 1 small onion(s)
  • 1 garlic clove(s), optional
  • 1 tbsp, leveled flour
  • 50g Gouda
  • salt and pepper
  • herbs, to taste
  • 2 tbsp cream cheese, natural
  • 80 ml water or milk

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

vegetarian

Peel the potatoes, cut into bite-sized medium pieces, and cook as usual until cooked through but not soft. Finely chop the onion and sauté in a pan with the garlic and a little oil until translucent. Then add the washed spinach leaves. Once the spinach has wilted, sprinkle with flour. Add the water or milk and cream cheese. Bring everything to a boil over low heat. Then add the Gouda and potatoes. Once the cheese has melted, roughly mash everything or eat it as is. The mash is delicious with fish or steak. My toddler absolutely loves it.
