Asian-inspired

Trim, wash, and remove the stems from the spinach. Bring water to a boil with 2 tablespoons of sesame oil and 2 tablespoons of soy sauce. Meanwhile, toast the sesame seeds in a pan with 1 tablespoon of sesame oil. Set aside 1 tablespoon and blend the rest with chicken stock and 1 tablespoon of soy sauce until creamy (use a narrow container for this). Season with chili and pepper. Add the trimmed spinach to the boiling water and let the leaves boil briefly. Reduce heat and let stand for two minutes, then drain. Serve on plates with the sesame cream and toasted sesame seeds. We like to serve this with fish.
