Leberkäse salad

Ingredients for 10 servings:

  • 1 kg Leberkäse
  • 300 g peas, frozen
  • 500 g water
  • 400 g peppers, from the jar
  • 600 g cucumber(s), sour
  • 4 tbsp vinegar
  • 1 tbsp mustard
  • 125 ml oil
  • salt and pepper
  • Paprika powder, sweet
  • 3 onions
  • some parsley, for sprinkling

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 30 minutes

Put 500g of water plus 1 teaspoon of salt into a pot. Add the peas and cook for 10-12 minutes. Meanwhile, cut the Leberkäse into small cubes, the peppers into strips, and the cucumbers into small pieces, and place them in a suitably sized bowl. Once the cooking time is over, add the drained peas to the bowl as well. For the marinade, mix the vinegar, mustard, cooking oil, pepper, salt, and paprika. Pour the marinade over the salad ingredients and mix. Before serving, slice the onion into rings and scatter over the salad. Finally, sprinkle with some chopped parsley. Let stand for 3-4 hours, preferably overnight.
