Ingredients for 6 servings:
- 400 g Leberkäse
- 2 tbsp oil
- 250 g mushrooms
- 3 spring onions
- salt and pepper
- Mustard, medium hot
- 6 slices of toast
- 100 g cheese (Brie), more if desired
Instructions

Slice the Leberkäse into slices so that they fit nicely on a slice of toast. I simply had to cut my Leberkäse in half for this. Heat 2 tablespoons of oil in a pan and fry the Leberkäse on both sides. Remove it from the pan and fry the sliced mushrooms and spring onions in the same pan. Season with salt and pepper. Lightly toast the slices of toast and spread a thin layer of mustard. Spread the Leberkäse on top first, then the mushroom and onion mixture, and sprinkle with the finely diced Brie. Bake in a preheated oven at 175 degrees C (350 degrees F) until golden brown in about 8-10 minutes, until the cheese has melted and the toast has a nice crust. Note: The toast makes a great, quick dinner with broth and a salad. If you don’t like spring onions or Brie, you can substitute them with finely chopped regular onions and grated cheese or cheese cubes, if desired.
