Ingredients for 4 servings:
- 1,200 g potatoes
- 200 g ham, diced, lean raw
- 2 bunches of chives
- 3 eggs
- 375 g low-fat curd cheese
- 1 cup of cream
- 3 tbsp, leveled flour
- 30 g butter, room temperature
- 1 tsp, leveled cayenne pepper
- Salt
- Pepper, freshly ground
- 200 g cheese, grated spicy

Boil the potatoes in their skins, let them cool, peel them, and slice them (this works well the day before). Place the potato slices and the ham cubes in a baking dish. Thoroughly whisk the eggs, quark, cream, flour, and butter together. Add the chopped chives and the cayenne pepper (if you like, you can also add 1-2 chopped garlic cloves). Season with salt and pepper, stir the sauce again, and pour it over the potato and ham mixture. Bake the casserole in a preheated oven at 200°C (400°F) for 30 minutes. Sprinkle with cheese and return it to the oven for another 10 minutes. The casserole is best prepared in the morning, so the sauce absorbs the potatoes better. In summer, I like to add tomato slices to the casserole.
