Leek and Feta Pithiviers

Ingredients for 6 servings:

  • 1 pack of puff pastry, frozen, thawed
  • 4 stalk(s) leeks, cleaned and washed
  • 3 tbsp butter
  • 2 tsp honey
  • 1 tsp rosemary, chopped
  • salt and pepper
  • 200 g feta cheese
  • 1 egg(s), beaten

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200 degrees Celsius. Spread the puff pastry on a floured surface and cut out 12 circles each, each about 13 cm in diameter. Chill the circles in the refrigerator while you prepare the filling. Thinly slice the leek and sauté in butter until soft, about 10 minutes. Stir in the honey and rosemary. Season with salt and pepper and let cool. Crumble the cheese and add it to the leek, mixing well. Place six of the circles on a baking sheet, arrange the leek on top, slightly mounding it in the center and leaving a 12 mm border. Brush the edges with the beaten egg, place the remaining 6 pastry circles on top, and lightly press down all around with the prongs of a fork. If you like, you can carefully draw decorative stripes radiating outwards from the center, being careful not to cut the pastry. Brush again with egg. Bake in the preheated oven for 20 minutes, until they have risen and are golden brown. Serve with spicy chutney.
