Leek and potato pan

Ingredients for 2 servings:

  • 2 stalk(s) leeks
  • 2 spring onions
  • 1 large potato(s)
  • 50 g raw ham, diced
  • 1 red bell pepper(s)
  • 1 tsp, heaped clarified butter
  • salt and pepper
  • 2 tsp sugar
  • Paprika powder, sweet
  • 1 shot of milk
  • 1 dashes lemon juice
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the potatoes and cut into small cubes, slice the leeks and spring onions into rings, and dice the bell peppers. Heat the clarified butter in a high-fat pan and fry the potatoes briefly, then add the ham cubes. After 10-15 minutes, add the leek rings, bell peppers, and spring onions and sauté everything over medium heat. Season with salt, pepper, paprika, nutmeg, sugar, and lemon juice. When the leeks start to soften, deglaze with a good splash of milk. When the potatoes are tender after about 20 minutes, season to taste and serve. If you like, you can simmer it a little longer, but I prefer it firm to the bite.
