Ingredients for 1 servings:

  • 150 g leek, cleaned, washed and cut into thin rings
  • 5 g yeast, fresh
  • 300 g flour, type 405
  • 150 g seeds (sesame seeds)
  • 1 tsp, heaped salt
  • Olive oil for brushing
  • some butter
  • 160 ml water, lukewarm

Instructions

Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Dissolve the yeast in lukewarm water and let stand for about 5 minutes. Sauté the prepared leek in the butter. Sift the flour into a mixing bowl and mix with the sesame seeds. Then add the salt, leek, and the yeast-water mixture. Using a hand mixer, knead the dough, first on low speed and then on high, until you have a smooth dough. Then, with floured hands, shape the bread into an oval loaf. Brush the bread with olive oil and place it on a baking tray lined with baking paper. Place the tray in a cold oven on the middle rack, set the oven to 220°C (200°C fan/convection oven), and bake for about 35 minutes. The bread is ready when it sounds hollow when tapped.
