Leek in honey marinade

Ingredients for 1 servings:

  • 2 kg leek
  • 150 g honey
  • 400 ml vinegar (apple cider vinegar)
  • 2 bay leaves
  • 6 juniper berries
  • 2 chili peppers, dried
  • 1 tsp sea salt

Shelf life: approximately 6 months. Wash the leeks thoroughly and cut into approximately 2 cm wide pieces. The light green parts can be used. Bring the honey, vinegar, 1/4 liter water, spices, and salt to a boil in a saucepan. Place the leek pieces in a porcelain bowl and pour the marinade over them. Cover and let stand overnight. Then bring the leeks to a boil in the marinade and simmer for about 5 minutes. Then fill jars while still hot and seal immediately. Let the leeks steep for at least 2 weeks.
