Ingredients for 4 servings:
- 2 stalk(s) leeks
- 2 eggs, hard-boiled
- 1 can of corn
- ½ jar Miracle Whip
- some lemon juice
- salt and pepper
- possibly apples
- possibly pineapple
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Rinse the eggs and dice them. Clean the leeks and slice them into rings. If you can’t stand raw leeks, you can blanch them for 2-3 minutes and drain well. I prefer blanched ones. Drain the corn. Mix the leeks, eggs, corn, and mayonnaise (you can add more mayo to taste, of course). Season to taste with a squeeze of lemon juice and salt and pepper. You can refine the dish with pineapple or apples. Goes well with: Grilled food, as a side dish to meat, and baguette.
