Leek salad with bacon in vinegar and oil dressing

Ingredients for 2 servings:

  • 1 leek(s)
  • 1 garlic clove(s)
  • 50 g smoked bacon cubes
  • ¼ tsp mustard
  • 3 tbsp balsamic vinegar, lighter
  • 4 tbsp olive oil
  • 1 tsp, levelled sugar
  • 1 tsp, heaped salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Halve the leek lengthwise and cut into thin strips. Finely dice the garlic clove and sauté with the bacon over low heat. Add the leek, increase the heat slightly, and sauté gently. The leek should not become too translucent and should still have a bit of a crunch. Mix the remaining ingredients into a dressing and combine it with the leek and bacon mixture in a bowl. Walnuts or toasted pine nuts go well with this.
